Monday was kraut making time at the Frazier home in the valley. The assembly line was ready at 8 a.m. Jimmy Kimbrell cut the cabbage open one at a time and did the trim outside. Kathy Hendrix washed the cabbage and cut in smaller pieces so it would go into the grinder. Judy Kimbrell’s job was to grind the cabbage. After two or three large mixing bowls were full of ground cabbage, Louise would pack it into sterlized jars and pour the water solution over to the top of the cabbage. Yield: 32 quarts.
This is the recipe: one gallon cold water, one cup canning salt (dissolved, one cup white vinegar. Mix and pour this solution over cut-up cabbage. Seal with hot canning lids. Makes beautiful good tasting sour kraut. Try it you will like it. Put in a dark cool place.
